So I just got home from picking up “rations” for this weekend and thought I’d share…
From left: Big Sky Brewing Co. Powder Hound, Woodchuck Hard Cider Seasonal, Blue Moon Harvest Pumpkin Ale, Lakefront Brewing Co. Pumpkin Lager, ANOTHER Woodchuck Seasonal (because I like cider, it’s fall out and…I like cider) and Boulevard Brewing Co. Nutcracker Ale. Pretty excited/happy about my selection for this weekend. I think I’ve got the seasonal brews covered.
So holy crap. I can’t believe I just made these but I did. They are homeade ricotta and spinach ravioli with a tomato and basil cream sauce. I REALLY shouldn’t be this excited about cooking for one person. But when the result looks like this, I think it’s an exception. Right?

So dinner tonight consisted of gnocchi. I’d heard of it but didn’t really know what it was and hadn’t considered getting it ever, really, until seeing it at Trader Joe’s today. For $2.99 a bag, I couldn’t resist. So after some Google work, I found out that it’s basically an Italian dumpling. Sounded harmless. That being said, I still wasn’t sure how I’d like it. It was cooked in a tomato/basil sauce which I was fine with. It was the gnocchi itself I was still skeptical about. And so after taking the leap and tasting it, there’s only one thing I can say…that Trader Joe makes some DAMN good gnocchi. :)

So as evidenced by my new co-worker above, the last hour at work has been VERY productive.
This is the definition of selfless. If you have 4 minutes and want to see a video that will bring you to your knees, watch this.
It’s about Rick and Dick Hoyt, a father and son duo who are extraordinary people. Here’s a sum up of their story in case you’ve never heard of them…
Rick was born with cerebral palsy. His father and mother were told to forget about him and put him in an institution because he’d never be anything but a vegetable. They went against that advice, choosing to bring him home and raise him like any other child. He led as normal a life as possible but it wasn’t until high school when something changed. Rick told his father that he wanted to run in a 5k charity race for a classmate who had been paralyzed from a car accident. Dick wasn’t a runner by any means but jumped at the opportunity, pushing Rick in a 3-wheeled racing buggy the entire race. Afterward, Rick told his father that when they were running, it felt like his disability was gone…and that’s all Dick needed to hear.
To this day, with Rick in his mid/late 40’s and Dick in his mid/late 60’s, they participate in triathlons throughout the country year round. In each triathlon, Dick swims while pulling Rick in a raft behind him. He rides a custom built bike with a seat on the front for Rick. And he runs behind a racing buggy, pushing Rick the whole way. The finish each and every race. This man does all of this for nothing more than the pure love he has for his son…to give his son something that he otherwise would never be able to experience. This is the father that I someday hope to be.
